Gestational diabetes screening - first test

I have my one hour test scheduled the day after my anniversary. We are going to Asheville for the weekend and even though I usually avoid or limit sugar and refined carbs, eating mostly protein, the food in asheville is amazing and I'm not willing to "make healthier choices" while I'm on my anniversary trip. I'm not going out of my way to eat poorly but I plan on eating a few fried things while I'm there, including a donut or two, and not limiting carbs. I asked the nurse if it would affect my test results. I'm already planning to just have eggs and water, per Dr.'s recommendations, the morning of the test. The nurse said just eat mostly protein at dinner the night before but she didn't sound very confident. And I keep reading on here other people's doctors telling them to eat mostly protein in the 2 or 3 days leading up to the test so they don't get a false positive...? I definitely want to catch GD if I have it, not wanting to fool the test. I also don't want a false positive. What do you think I should do??
