I've heard the term used before but I don't actually know what it's done for or if it's healthy or not, and why it's become so popular!

It's exactly what it sounds like. It's lightening of the skin around the anus. So it looks "nicer" if you have a lot of anal sex. Personally I think it's rediculous and girls face way too much pressure to make their bits look like some sort of stupid ideal. But each to their own....
