Just made this:
Green Chili Chicken Enchilada Soup
2 chicken breasts (boiled for 20 minutes)
Reserve 3/4 cup of that chicken broth
3 large potatoes, cut in bite size pieces, boiled
2 cans green enchilada sauce
2 small cans diced green chiles
1 can condensed cream of chicken
1 can condensed cream of potato
Shred the chicken breasts (I use my kitchenaid mixer with the paddle and it goes super fast.) Add all ingredients to a crockpot, stir it up and put it on low for 3 hours, or high for 1.5 hours. Serve with shredded cheese and a tortilla.
We had dinner tonight, lunches for tomorrow and a gallon ziplock full in the freezer from this one batch!
