My 10 week old has roughly about 8 wet diapers a day and one big poop is that normal ?

Roughly 6 to 8 wet diapers and a poo every day to every other day.

Oh god I was going through 20-25 diapers a day at 2 months. He is 5.5 months now and now it's about 15

Lucky you.  My son poops pretty much every time he pees. He goes through 7-10 diapers in a 24 hour period and 90% have poop. Lol

8-10 wet diapers. Poop really varies. He's started skipping a day or two sometimes, but on days that he does poop it's usually 3-4 poopy diapers. *shrug*
