What is your go-to way for making quesadillas?

Okay I've been CRAVING chicken quesadillas!!!! 
What is your go to way of making them? Just chicken and cheese? Do you add beans and salsa in tortilla? Or put on top? Onions and olives in tortilla or as garnish or neither? Sour cream and salsa as garnish????? ADD taco seasoning to chicken or plain? Guacamole or avocado?

I make sriracha chicken quesadillas. Mix shredded chicken, some cream cheese, lots of shredded fiesta blend cheese, and sriracha in bowl. Cast iron skillet on medium heat,butter the skillet, put sriracha mayo on one side of each tortilla (the inside of the quesadilla), then fill it with the chicken mix. Flip once.
So, so good.

I use sour cream shredded cheese chicken chopped onions, green peppers, more shredded cheese and salsa. My bf loves them!

It depends what I have on hand. Chicken or beef or egg, cheese, jalapeno, onion, spinach, tomato, peppers, bacon... Just whatever looks good.
