Chicken (bone broth) Soup recipe

4 x large chicken drumsticks

2 x large carrots

2 x medium onions

4 x celery stalks

1 x spinach leaf

4 - 6 Massel Australia chicken stock cubes to 8 litres of water

3/4 cup of tiny pasta beads

2 x drops of doTERRA Australia coriander oil

Place chicken, whole carrots, whole celery stalks and whole peeled onions in pressure cooker with 8 litres of water and 4 x stock cubes and cook on high pressure for 20minutes.

Once pressure has released remove chicken and vegetables into two separate bowls and allow to cool

Strain liquid to remove any small bones and place strained liquid back into cooker and bring to boil, add 3/4 of a cup of small pasta beads, chopped spinach and bring to boil until pasta beads are cooked (approx 10min).

Whilst the pasta is cooking remove all chicken from bones and break into small peices (ensuring all bones are removed)

Use a fork and mash all the vegetables.

Once pasta is cooked taste the liquid, if more stock cubes are needed add 1 or 2 more and cook for a further 2min, add vegetables, chicken and 2 x drops of doTERRA coriander oil.

Serves 4 - 6 people

Optional - add a sprinkle parmesan cheese to serve

Tip - freeze in small tubs for bubs 👪💪👶

NOTE : for maximum benefits cook the chicken and add extra bones and pressure cook in stock for three hours before adding vegetables or add all ingredients to a slow cooker (without the pasta) and cook for 8 hours

Price Foundation explain that bone broths contain minerals in forms that your body can easily absorb: calcium, magnesium, phosphorus, silicon, sulphur and others. They contain chondroitin sulfate and glucosamine, the compounds sold as pricey supplements to reduce inflammation, arthritis and joint pain.

A study of chicken soup (broth) conducted by the University of Nebraska Medical Center wondered what it was in the soup that made it so beneficial for colds and flu. Researchers found that the amino acids that were produced when making chicken stock reduced inflammation in the respiratory system and improved digestion. Also, research is proving it can also boost the immune system and heal disorders like allergies, asthma and arthritis.
