Strict parenting

Do you believe the notion that the stricter a parent is towards a child growing up, the more they're going to rebel when they're older and do the opposite of how they were raised?

An example being if a parent strictly limits a child's diet (all super healthy, no sweets, no junk what-so-ever) do you believe a child will rebel by eating unhealthy once they grow and see what they were missing?

Or if a parent doesn't allow any screen time at all, do you think the child will over-indulged in video games or binge watching tv when they get older?

I ask because I nanny for 3 young children whose parents are extremely strict and restrictive over what they eat, watch, listen to and do. Those are just a few examples, what are your opinions?
