Meal Prep Sundays
This is my fourth week of healthy meal prep. I don't have the healthiest breakfast (2 waffles with drizzle of syrup, some type of fruit, and a cup of milk with a coffee afterwards), however lunch and suppers have been 100% healthy for the past four weeks. This week I have made acorn squash with risotto stuffing for lunch (nearly vegan) and spicy loaded veggie chicken pitas (halved of course). I had no idea how tasty healthy eating could be. Meal prep saves time, money and resources. Why haven't I been doing this since the teen years? I also have a new found love for cooking. :) What are some of your favourite healthy meals/meal prep?
