Healthy low-carb recipes!

I need help!

It took four years to conceive our son, and only happened after I lost 40 lbs. I've let the weight creep back on and am having trouble conceiving again.

It's harder than before to prepare healthy yet filling meals, with a toddler running around and working 60+ hours per week. (When I lost 40lbs before, I worked part time and had no children.)

PLEASE share your quick and easy recipes? And suggestions for breakfast and take-along lunches are welcome too!
