If your SO told you to stop talking to someone(who's is not very relevant) & block them, would you do it?

Depends on who it is and why.  If it was an ex or somwthing then I'd get it. If it was just someone she didn't like I probably wouldn't unless she had a really good reason.

My husband isn't the boss of me. If there was a significant reason to block them (they're harassing me or him) then yeah I would, but my husband doesn't dictate who I talk to

I mean sure.  if they aren't relevant, why would I care?

Nope. My brother in law did that with my sister and her old high school friends. First it was an ex, then another ex, then a random friend, and eventually he was dictating who she could and couldn't hang out with in real life. Men and women alike. 
Don't let over controlling behaviors like this slide. They'll only get worse. 
If the person he's asking you to block doesn't mean anything to you, then they shouldn't mean anything to him either.
