I am due in one month and want to change my hair up! I currently have ashy blonde thin long (to my elbows) hair.

Cut it all off. Trust me, it's so much easier dealing with short hair when you have a newborn. Less spit up in your hair, less time to groom it, etc.

I had long hair (shorter than yours though) with a newborn without any problems. I wore it up a lot though. If you go too short you might not be able to put it up. I'd definitely get a cut with some layers since your hair is thin, it'll give it some body. I'd go to maybe shoulder length. It'll make it easier to get ready and do your hair when you want to look nice.
