Ingredients below:

3 long Red Chillis // 4-5 birds eye Chillis // 4 shallot onions // 4-5 cloves garlic // 4 sticks cinnamon // 2cm fresh ginger knob // 2-3cm fresh turmeric root // 2cm fresh galangal // 1 lime (kaffir if possible) // coriander seeds // kaffir lime leaves // whole cloves // cumin seeds // 2 lemongrass stalk // candlenut (can use macadamia) // fried onion (bawang goreng)

Chicken Pieces (500-600g total):

Leg // thigh // cut up breast

500ml coconut milk:

Curry topped with bawang goreng (fried onion). The rectangle extras are a yummy soy cake, marinated in garlic, water, salt and fried in canola oil (tempe).

This dish is one of those "happy place" dishes that take you back to a certain time or connects you to your people, for me, my Indonesian family taught me this recipe and whenever I eat it, it reminds me of good times and full tummies πŸ‘Œ

Ps. Spice is easily adjustable by halving the chillis used :) good tip, to turn down the heat of a chilli, scrape out the seeds before use! 🌢
