Baked Chicken nuggets at 4:00am
...It’s what I do when: my sleep schedule is all messed up; I’m craving chicken; I also want healthy and the chicken in the fridge needs to be cooked already.
I can’t believe I lasted this long; only 4 minutes to go, so I rant here to keep distracted.
Preheat Oven to 450
Stir fry chopped chicken (meaning it’s Pre-chopped 😏) 1lb
2 eggs (beaten)
Ritz crackers (smashed into crumbs) mixed with Cavender’s All Purpose Greek seasoning (Because my southern mom-in-law is just Boss)
Spray the Baking Spray onto racked baking sheet (use a cookie rack that’s approved for baking/it doesn’t have any non-stick lining on it) that’s on top of a cookie sheet.
Bake for 6 minutes then flip to other side
Bake for another 6 minutes
( I used stack that’s from another pan/roast dish that had wider distances between the “bars”, so I hung the piece over them. Basically I didn’t flip mine since both sides were pretty much exposed, which differed from cookie racks).
If this doesn’t make senes, Sorry. I’m hungry, it’s 5:15ish (I had to find a recipe to manipulate with the ingredients I had).
