What can I do to entertain a baby in the car?

Question

Holidays are around the corner, which means lots of traffics in my area. What can I do to entertain my 11 months daughter in the car(to avoid her tantrum)?
Any toys recommendation? 
PS I want to keep iPad/iPhone as last resort.

We have a playlist we play for baby every time we get in the car and it now has a calming effect on him because he is so used to getting in, and hearing the same music. So that might be a good place to start! Also, when we travel for more than an hour, one of us sits in the back seat with baby to entertain him, sometimes we read books, play peekaboo or just pass baby toys. But seeing us there helps him stay calm too. We also stop every 2-3 hours and stretch, it makes our drives longer but helps! 
The other option is what my parents did when I was a child. They would drive us at night- so we would pack up the car around 8 at night and hop in and then us kids would sleep through the night while they drove- which meant we stopped less often and didn’t really need entertained. So that’s an option too.

A balloon keeps my 10months old entertained. Tied it to the headrest so he kicks it and try to catch it and eat it. He also have a teddy bear that amuses him for as long is he bothers to hold it.

I can’t relate to that age yet. My first is 5 months old and my step daughters are 5&7. I didn’t get to meet them until about two years ago. We hate giving them our phones or the iPad because they turn into zombies. We try talking to them, let them color, snacks, toys or really squeeze the energy outta them throughout the day so they nap in the car.
