Pamphlets come with stickers to change it to whatever start day you want. I've always been told to start on the first day of my period.

If your pamphlet says Sunday, then the Sunday

It does not matter. Both methods are quite acceptable and does not make a difference. 
In theory you should be able to have unprotected sex from day 1 when you start on the first day of your period, but do not take chances. Some of the modern pills even state that you are protected from day 1 when you start the pill pack on day 1 of your period.

Depends on what your Gyno (& directions) say. Even though mine lists out the days starting on Sunday, I started mine during my period (which is what my Gyno said to do) which was on a Tuesday. My pills come with stickers to change the start day to Tuesday. It works for me.
