Bran muffins!
Ladies I thought I'd post my bran muffin recipe. It is very forgiving - you can change ingredients (add some coconut, or oats, or substitute butter etc and they still work). They also taste great and help with bloating & constipation!
You need 2 large mixing bowls. One for wet and one for dry. This makes ~ 24 muffins
DRY
3 c plain flour
1.5 c unprocessed bran
1 c raisins*
1/2 c sugar
1tbs mixed spice
3tsp bicarbonate soda
1tsp salt
WET
2 c milk
2 eggs
1/2 c vegetable oil
3/4 c water
1/2 tsp vanilla
1tbs treacle/molasses/golden syrup
*swap this for any dried fruit or berries, nuts, banana, whatever
Put all the dry stuff in the dry bowl and mix it up
Put all the wet stuff in the wet bowl and whisk it well
Pour the wet into the dry and mix. You don't really need to worry about overmixing - it's a very wet mixture.
Portion out into muffin tins and bake at 160°C for 20-30 mins until it springs back when you poke the top with your finger.
Note you can stick this mix in the fridge for weeks and bake small batches if you like. They lose some fluffiness but still taste good and this way you can just throw in different berries/fruit each time.
