Freezing Breastmilk

I'm trying to switch the being an EP momma, but won't be going back to work - nursing just isn't my thing! My question though is how do I start freezing breastmilk while still feeding LO? I'm only pumping about 3oz per session now which he can 100% of in one feeding. Do I just wait until my supply increases and freeze the excess? Would that mean I keep some bottles in the fridge to have feedings for the day? Just asking for the basics!!
