So this guy that I would really like to be my boyfriend told me I have a fat pussy and like he meant it as a good thing; however, I’ve always been insecure about that and idk is that normal?

The fat there is padding to protect your rather delicat parts down there. It is pretty normal. Of course, if you are overweight, there will be some extra fat in your outer lips. 
All women does not look the same down there either. Color, plumpness, what sticks out and what is hidden, is it more visable from the fromt or back (position) can differ dramatically from women to women.
The good thing is that none of that matters. It will not make you get a higher value partner, It is just a fact of life. Some people have big noses, some small, some ears stick out, some don’t, some lips are full, some are flat, some eyes are brown, some are blue. What counts is the type of person you are, your personality.
Even the most gorgeous models and actresses have problems with insecurities and their own body image. The secret is to not let your inner critic convince you that something is wrong. When you notice that it is happening, just stop it You are ok and gorgeous, no matter what your inner critic says to you.
