Should you be able to openly discuss a company treating you like shit as an employee in a professional setting?

Question

Post based off the resume post. Obviously with better wording, but should you be able to discuss your feelings and reasons for leaving with a potential employer without fear of missing out on a job opportunity? 
Bonus: 
Why is it inappropriate to talk about these things in your opinion? Why is it viewed as "shitting on a company"?

It's more of a reflection of you as an employee than it is of the company. They're looking to see what you would be saying to a future employer should you get fired/quit from the job if they hire you. So in you come in shit talking your last employer, they're probably going to assume you'll shit talk them. Doesn't look good for the business and makes your an undesirable employee

It depends on how you word it. You can be respectful towards a company you worked for while also discussing and listing reasons why you left, or why you may not have liked it as much as you originally thought, & reasons why you’re looking for a new employer. 
Blatantly saying that the other company is shitty, they screwed you over, you hated your actual job & your coworkers is no way to express why you left that said company.

If you’re reason for leaving was because you’re being mistreated (ie. Reduction of hours w/o reason, overworked, underpaid, bad work environment etc) you have every right to defend yourself. ESP. If the company is known for blackballing former employees

I would never talk badly about an employer in an interview or any professional setting. That’s just asking for trouble. And reflects on you as a person. All you have to say is “it wasn’t a good fit”, “it didn’t work out”, etc. It’s like going through a breakup and dating someone new. No one cares about the messy details and the more you talk about them, the worse you actually look

This came up at work today actually. And before anyone complains about work, they should make sure they’re perfect.
We had a guy complain about his new boss, who has been with the company a long time, super smart and everyone at our office loves her. He is in a different location. He decided it was appropriate to go to the managing partner about his gripes thinking they would side with him. Well they didn’t and said to HR this is what was told to me blah blah then “I’ve heard he’s not very good at his job.” I bet he’ll be gone soon. 
So the point of my story is, you never know who knows who and if it could get back to the person/company you are bad mouthing

Sitting there "talking shit" doesn't do anything positive for you or your image. 
No one wants to hire a whiner... What they want to hire is a winner. You wanna change the way future employees treat people? Change your attitude.. talk about the things you like about other companies and how they treat their employees.. but sitting there spouting off at the mouth about a previous employment, is just negative, it creates a negative bond.. and negative bonds become toxic.

Yes, of course. It’s generally not a good idea though. At least in a complaining manner. It can actually be a great opportunity to display your professionalism and tact in an interview. If you word things carefully a potential employer should be able to read between the lines, while seeing that you’re intentionally avoiding shit talking. 
For example: 
“So, tell me about your experience with your last job, why did you left?”
“I really loved the client interaction there. I felt like it really gave me an opportunity to work on my problem solving skills. Unfortunately, scheduling became difficult under new management, and I need something dependable, so I can give my all.”
Sounds a hell of a lot better than, “it’s poorly managed, and the incompetent person running things can’t figure out a damn time sheet.” Even if that’s totally accurate. 
It goes both ways too. I interviewed for a secretarial position in college. It was at a fancy ass law office downtown. I don’t really care for secretarial work, but it would have been neat to work somewhere like that for a couple years. The law partners short listed me, and in the second round interview they made a couple cracks about the current secretary. Including how she dressed. It was really unnecessary. I didn’t get the job, but after that I was glad. I may have even declined if it was offered. I don’t want to work for anyone that thinks that’s acceptable behavior.

“It wasn’t a good fit and I didn’t feel valued there” is a polite and appropriate response if someone asks you why you left a company. You can make it work appropriate while still being honest

Presentation is everything that’s all I’m gonna say how you present your self is how you’ll be looked at I don’t think you should just go in flash and out and just pointing fingers it could actually be pretty effective if people learn to leave their emotions out of business!
