My son has no interest in story time yet. He just tries to eat the books & fusses cause he doesn’t want to sit still with me.

Well, there is good in that too! I just read that it's beneficial when you reread stories to them. However for your own sanity LOL here are a few books that we have read ... My daughter is absolutely obsessed with the book you are my little pumpkin pie, the going to bed book is always a big hit, everything is Mama / Dada books, and if you were looking for books for when she's not going to bed, there are these amazing ones from Target that have rubbery tactile pieces in it and she is absolutely obsessed got. They are called never touch a shark, dinosaur, monster. There's also a book with soft pieces in it called that's not my bee Which she also likes a lot.

My baby?! I read out loud whatever I’m reading. Being read to at this age is about the bonding, the hearing language and sounds and words repeated in patterns... it doesn’t much matter what the content is and usually they don’t have patience for pictures. 
He’s listening to me read book 2 of Harry Potter to my daughter right now and enjoying it as a bedtime routine 🤷🏻‍♀️
