What do you take for vacation with your LO?

Stroller?
How much diapers for a week?
Can you take formula on a carry on?
Car seat?
We are planning a trip to Mexico and I have no idea where to begin on how to go about planning for a baby.

I would take a stroller. If I am tight on packing space I only pack enough diapers to get where I am going and then buy some there. If staying in a hotel I ask for a crib for the room but if we are staying at air b&b we fly our pack in play. As one of the kids pieces of luggage. Or when we only had one kiddo we waited till the flight offered cheap upgrades to first class because it was cheaper to take the upgrade and get to fly two bags per person than it was to fly an extra bag or two in economy. 
My kids have always flown really well and I just fed them a bottle during take off but these were breast milk bottles. I know they will let you take formula but i don’t know the restrictions on it. Generally had two new toys/books the get one at the beginning of the flight and second halfway through.

Kids, even if they are lap babies, are allowed their own bag, you can check their car seat, stroller for free at the gate or with main bag. Diaper bag is a separate thing. You are allowed to take baby food, milk (breast or formula) and botteled water (unopen). When they are older they can have a sippy cup with water. Be prepared that TSA will have to check all of with with a swab test. Takes few seconds but they will take you on the side and it's annoying. 
I always take a stroller and check it at the gate this way if we have a layover and I have to run I don't have to carry my baby or toddler. I usually have a car seat at the destination but I'm traveling to see family. If I would go for vacation I would take mine. On the long flights or bigger planes (transcontinental flights) you can ask for bassinet for baby that they attach in a special place. You have to do it in advance, when you book your tickets, because it's with selected seats. There is no extra charge for it so it's better to call airline once you have tickets.
Feed baby during take off/landing. My 3 year old flies 10h+ flights at least once a year and does amazing since the first one (he was about 9mo). My 4 no flew once at 2mo and did great (2h flights).

I took stroller and car seat, they can both be gate checked. I always pack enough for 4 days and then plan to wash and shop as needed because I hate lugging around huge suitcases. Diapers for 4 days for me is 6 per day x 4=24 and a Whole package of wipes. Plan that your baby will need 2 outfits a day because of blowouts, leaks, it up etc so 8 outfits. That’s how I pack and it works for me.

I’m currently away with my little one. Check with airlines on baggage allowances but I could have 10kg suitcase and the stroller/pram a travel cot for free in oversized. I took a pack of nappies and but then in with the pram as I used the carrier at the airport and sent the pram off early
For formula there is no limit. They may ask you what it is. But I took 2 formula tubs and loads of ready made. No issues. 
Also take sterilising tablets with you for the bottles
