I am so thrilled to find this group!!! Yay!!!

My husband and I LOVE to cook together. We are always trying/learning new things. The pinned post said to present our “fave food”, this is it! We LOVE making nachos. This batch I tried making shredded chicken and I was ecstatic about how juicy and flavorful it turned out!!

Can’t wait to see what’s cookin elsewhere and swap recipes!

RECIPE UPDATE.

(I am a detail person guys, sorry lol)

Shredded chicken nachos

2 boneless chicken breast

Tortilla chips

Slap Yo Mama seasoning (spicy) or Cajun seasoning (not so spicy)

Garlic powder

Fresh cilantro

BONUS SPICE: Ras-el-hanout (find it at an Arabic market)

Toppings

(I used diced onion & vine tomatoes, sliced Serrano peppers and shredded cheddar cheese)

Sour cream

1. Clean chicken breast. Cut off any fat or veins, place in bowl, salt and then wash with white vinegar. Let chicken sit for about 1 minute and then rinse with water

2. Place pot on stove, add a cap of olive oil, place chicken in pot, add all seasoning. (I did not measure seasoning, I never do, just covered the surface area with each spice and about 1/2 cup of cleaned cilantro. Pour in about an inch of water.

3. Let it boil, turn heat to simmer and cover. (Now the chicken must cook to internal temp of 165 so, I clean up while waiting) make sure to check your chicken.

4. Preheat oven 350

5. Start chopping the toppings!

6. Once the chicken is cooked, I used two forks to shred it-no easy feat!! I am sure there are ‘tools’ to do this but, I don’t know which. Forks worked for me. Once all chicken is shredded mix it around in the pot and taste! It should be juicy and have a lot of flavor. If it doesn’t have enough flavor you can add spices.

7. Pan your chip, put a LITTLE bit of cheese and then add ALL your toppings including chicken! Then coat in cheese, cheese is your glue!

You can use sour cream as you like!
