I would say if you want it pronounces Chris -see then you need a double s. There’s a grammar pronunciation rule that if you have vowel-single consonant-vowel then the first vowel is a long sound rather than short sound. This means that all these names would be Cry-see. So to keep it correct with English grammar you could use any of these with a second s added - something like Chrissie, Krissy, or Chrissy would probably be most  common, but Chryssi should be pronounced the same.
