Food to eat with GD

I just got diagnosed with gestational diabetes and wont be able to go to my local diabetes center for 2 days to learn how to do finger pricks and the diet I should follow.

What are some foods that are safe to eat with gd?

Im a teacher, so snacks are also important for me.
