Foods with long last expiration dates!

My boyfriend and I constantly travel around the U.S. for his work. Every few months though we'll get a week or so where we can go "home". Our "home" is a stationary camper on a plot of land. Our camper has a fridge and freezer, microwave, sink, stove/oven. I want to make a grocery list of items we can keep there without worrying about them expiring when we return from when his jobs are over. Does that make sense?

These are some items I've googled and found don't expire quickly: canned food, crackers, canned tuna, nuts, beef jerky, sunflower seeds, pumpkin seeds, oatmeal, and popcorn.

Are there any others you can think of that I can add? I can't think of many meals that I can make with only the items I've listed..
