Cant go wrong with pot roast. Get you a good chunk roast. I throw the onions in my Dutch oven, brown them up with some olive oil, then add my potatoes (cubed) and baby carrots. Add the chunk roast, pepper/salt and add about 1 cup broth, 1/2 cup red wine and 1 cup of water. Cook in oven covered at 375 for 3 hours and then uncover it for 1 hour adding more water in.  I add some thyme and rosemary as well in but only if its fresh. If I dont have any I omit.
