Dairy free &vegan hot fudge sundae!

Archer farms vanilla bean almond milk ice cream, banana, homemade hot fudge, coconut milk whipped cream and cherry.

Hot fudge recipe (in the microwave!😲)

1/4 cup unbleached sugar

1/4 cup unsweetened cocoa powder

3 tbsp dairy free buttery spread (I used earth balance)

1/4 cup full fat coconut milk or unsweetened coconut milk creamer

1/4 dairy free chocolate chips

1/4 tsp vanilla extract

Optional: 2 tbsp light corn syrup. This just makes it gooey-er but not neccessary.

Add sugar and cocoa powder to a glass measuring cup or bowl. Mix together to break up cocoa clumps then add all other ingredients except chocolate chips and extract. No need to stir yet. Microwave on high for 60 seconds. Whisk. Keep going in 60 second intervals, whisking after each time until thickened and no lumps. Add chocolate chips and stir to let them melt slowly, add extract. Use immediately or store in a glass jar and refrigerate for up to two weeks. You can reheat in the microwave.
