7 yr old birthday party ideas?!

I’m having the hardest time trying to figure out what to do for my 7 year old step sons bday. We did the park last year with a lego theme. This year he asked for a water park party but they are still young and if they can’t swim then it’s a safety issue. We looked at jump n fun places and they are very expensive. Bowling seemed lamed. Mini golf if a maybe. Sleepover is a lot to handle if it’s 6 kids or more. Airboat ride would be cool but then we’d have to pay for parents too. Triumph they have to be between 7-8 and some of his friends are still 6. I need ideas!!!! Help it’s only 16 days away and I’ve been beating my brain dead. Maybe beach party? We live in Florida.
