Lactation Energy Balls

jacqui

Just wanted to share this tasty and simple recipe for lactation energy balls I found. With getting to the store less, I love that all the ingredients will keep on the shelf for a long time which allowed me to stock up for multiple batches. Also, made them both by hand and in a stand mixer and neither took more than 10 minutes so it was easy to squeeze in. They are tasty enough that my husband snacks on these as well. I’m not a nutritionist and was not having supply issues so please see a professional if you are having issues but I am building a freezer stock pile and have been getting almost twice as much since I’ve introduced these as a snack.

Servings: 36 1in bites

Ingredients

2 cups rolled oatmeal

1 cup chocolate chips (use dairy free if needed)

1 cup creamy peanut butter

3/4 cup ground flaxseed

2/3 cup raw honey (can swap for agave)

2 tsp vanilla

Instructions

In a large bowl, add all ingredients.

Stir until very well combined

Using a small cookie dough scoop or your hands, roll into 1" balls.

Place on baking sheet.

Place in fridge and let sit for 2-3 hours.

Store in air tight container in the fridge.

Eat as desired.

Recipe Notes

*Crunchy peanut butter will not hold these together well.

*Add an additional 1/4-1/2 cup of flaxseed if you really need an extra boost of milk production.
