Toddler lunch& dinner suggestions?

Question

I have a 14 month old, not technically a toddler but I have a hard time giving her foods and she refuses to eat them. What are some dinner/ lunches your kids like?

I like to make various types of muffins(they’re freezable🙌)-and I can hide vegetables in there. Apple and cinnamon, carrot and cranberry, blueberry, etc...I make breakfast muffins with eggs, sausage, broccoli, onions, peppers (or any veggies u want) and she scarfs them down. I make pizza muffins also, look on Pinterest there are tons of things u can do with muffins!! 
She loves grilled cheese, and I cook up small pieces of broccoli and put on it while cooking (because that makes it healthy, right?!😬)
Lunch meat sandwiches, chicken nuggets, mozzarella sticks, PB&J...
She will eat scrambled eggs with cheese and some spinach or broccoli or ham cooked in. Blueberry pancakes(no syrup), oatmeal with various fruits mixed in.

My fussy eater now 11. Is no longer a fussy eater but when he was little he had issues with certain textures. But he loved mashed potato, I could add carrot, broccoli, etc. He didn't like egg but ate French toast and sugar free pancakes. But I just persevered trying to get him to taste just a bite of the foods he didn't like. As he got bigger I'd say just two bites etc by the time he was seven just seven bites, then he realised he may as well just eat it! He even decided he can eat scrambled egg recently previously his most hated food! He made us smile by saying says "I still don't exactly like it, but recive it with thanksgiving anyway!" quoting his Great Grand Dad who said "don't eat too much, don't eat too little but recive your food with giving thanks to God"

My daughter isn’t super picky but loves beef stew, pot pie, stir fry’s, any pasta, Shepard’s pie, chicken rice soup, quiche... I usually try to put a bit aside for lunch the next day. 
Eggs are always a hit, sometimes I keep a ham in the fridge and cut some of that up, always have lots of frozen veg I can warm up, grilled cheese, quesadillas...

We make on&j sandwiches with yogurt as a side for lunch most of the time. Sometimes it's chicken nuggets or veggie tots. For dinner we do things like canned ravioli, pizza, veggie tots, chicken nuggets, ECT.. with veggies. Not everything is healthy 😅 but that's what we do.
