I kinda wanna make homemade chocolates. Does anyone know a good recipe?

Ideally I'd like to make filled (flavors below) chocolate but anything is fine.
1. Caramel filled milk chocolate
2. Raspberry filled dark chocolate
3. Strawberry filled white chocolate

What level of homemade? Are we talking about crushing cocoa beans level homemade? Using cocoa powder homemade? Or melting down chocolates and adding your own extracts/mixings homemade?

Literally easiest way to make legit chocolate is just to melt cocoa butter in a double boiler (or just in a steel bowl in a boiling pot of water)
Then add in vanilla or peppermint extract and maple syrup.
Then pour in the moulds and add other flavourings, insides etc. Freeze!
1 cup cocoa butter
1/2 cup cocoa powder
1 tsp vanilla or peppermint
3 tbsp maple syrup
