What are your favorite vegetarian dishes?

If you eat cheese, ￼I love a good veggie lasagna, roasted veg quesadillas￼, or enchiladas. Even if you don’t eat cheese these are great dishes that you can make with alternative cheeses like cashew cheese. You can also make tacos with a filling made of lentils. It’s so good! ￼￼Another favorite vegetarian dish is malai kofta. ￼￼

Tofu or tempeh satay skewers
Chilli
Roast veg lasagne
Buddha bowls with quinoa
Pearl barley & root veg stew & dumplings
Veggie sausages, mash & veg
Lots of pasta dishes, ravioli etc
Veggie/vegan burgers, potato wedges
Risotto
Salads - I usually add something hot & make a creamy cashew dressing
Stuffed mushrooms
I have been veggie/vegan all my life... I have hundreds of cookbooks but my absolute favourites are Green Roasting Tin, Deliciously Ella Quick & Easy, Bosh (first one is best), Happy Pear Vegan
