to quit and put in a two weeks do you just talk to your manager? or do you have to file it on paper or something?

I would just tell them you're putting in your two week notice and you would like to know the formal process. There have been jobs where I only needed to write a note with my signature and other companies had to fill out paperwork like an exit interview and feedback on the company

I've always typed up a letter and emailed it to my boss then confronted them about it the following morning 1. To make sure they got it and 2. To show that I wasnt sending it from a "hostile" or negative state of mind and offer in person to help with the transition process for a new hire.

i would email them if possible, that way you have a written/digital copy and it's more professional than a text. talking in-person is fine but it's possible they'll forget.
