Which is correct method/better?

Is it better to nurse some off both breast each session or do one breast each time?
My baby is 3 weeks old, gaining great- no issues just wondering what will happen with my supply in each scenario

There is no correct answer here! 
I had to feed one side each time due to a crazy over supply. But my boobs can naturally hold 10+ Oz each side. My best friend had to use both each time as hers naturally holds way less(the normal amount). We both breastfeed 14+ months.

The lactation consultant told me to let them get their full off the first, then switch them for “dessert.” Then start with that breast at the next feeding. Sometimes that looked like 40 minutes on the left and 10 on the right, but it served me well. We are just now weaning at 21 months.

It is what works for you.
I feed from one breast one feed, just because i have overflow and baby can not empty both of my breasts one feed, i also don't bump the excess. My son is also always been on top of his growth curve, so k do not worry at all about him not having enough milk.
But often women need to offer both breasts to get baby fed. That is also the case at the beginning. You need to go by what is best for you.
