Roach infestation? Please help

Hello all. I want to mention that I have never ever in my entire 24 years of life experienced this. I lived my whole life in South America. My family always left the dirty dishes, food left in the counter if we ate at night etc and we had a housekeeper that would come in every morning and clean up after us (sometimes that same day of course)… never in my life seen roach or roaches in the two homes we lived in with my family my whole life. when I moved out I had to clean up after myself of course so I did but then sometimes I would leave the dirty dishes for the morning or something (not a problem, i never used a dishwasher, but after this I might). I probably seen 3-4 roaches in the whole 4 YEARS I lived in Texas. Anywho now I moved back to South America and now I live on my own with my own little family and my 2 babies. We moved into this home that they just made some new arrangements too, and we are so in love with it, we are now living here for almost 1 year. We even wanted to buy it. Well now I wanna get out of here tbh, I cant wait till our lease is up. Because its been about a month now that I have gone downstairs to our kitchen (to make food or make formula for my infant-grosses me out to even think of this) and I see little roaches about the size of my nail to say the biggest ones (they are relatively small, but I know they carry all sorts of bacteria). First it was one or two… not that many… now its just constant, every night, and I dont even want to go to my kitchen anymore. My baby cant crawl in his own kitchen bc im scared he will get an infection (and he had really bad bad diarrhea not too long ago now that I think about it) I did not know this would be called a “roach infestation” and that its super dangerous. I called a pest company. And we had everything removed in the kitchen and they sprayed inside and out. And we left the city with our 2 babies to get this finally solved because I was freaking out. The guy from the pest company said that the house needs to be cleaned very well after they sprayed, so we waited a bit longer we left from wed-sunday. But he said I would not see any more roaches. Now sunday we are back Home and im feeling sick to my stomach as I went downstairs@ 7 pm to realize there were not only two tiny roaches but three. I just want to move out and forget about all of this. I am so paranoid. I try to be as clean as I can we don’t even use shoes in our home bc I like everything clean. Im a sahm so sometimes at the end of the day I only wash bottles and leave the dishes for the morning. It cant be possible these nasty creatures are coming here bc of some dirty dishes? What can I do? Im so scared even for my family my babies they like sitting on the counters etc its like how can i even let them do that when there are roaches crawling around everything all night long. I feel disgusted and uncomfortable to say the least. One woulda thought I live in the suburbs of ny or something.
