What you need to do:
Steam the rice and cook the beef with taco seasoning. Then grab a bowl, put in the rice and the meat on top. Sprinkle some cheese and you're done. Sooo easy! And So yummy.

In a casserole dish you can take a cup of uncooked rice, pour in 2 cups of water, a can of cream of mushroom, or whichever cream of you like, you can either use whole boneless chicken breast, but I always cut mine up into cubes, uncooked, season the chicken, and put it on top, cover with aluminum foil and back on 350, maybe about 45-60mins. If you want maybe about 20mins before its done add some frozen broccoli, finish cooking. Add some shredded cheese to the top, and let it melt. Got it off Kraft recipes it's great, and easy.

Another quick and easy idea. Tacos! Get some ground meat , sautee it with onions garlic, and taco seasoning. Buy tortillas, taco shells or even whole grain wraps then get a few toppings together like salsa cheese lettuce sour cream etc etc. and you're done. You can use ground chicken, lean pork or turkey for healthier options too.  The meat also stays good for up to 3 to 5 days so you can cook ahead and eat all week

Toss different types of vegetables (squash, zucchini, peppers, onions, carrots, cabbage, broccoli, asparagus - whatever you like) in some olive oil and a little salt & pepper.
Grill them in a grill basket (or roast in oven) and then serve over or toss with orzo, rice, quinoa, bulgar - again whatever you like.

Stuffed chicken breast. Stuff it with cream cheese and spinach, tomato and basil, mozzarella and bacon, cream cheese and mushrooms, or anything else you'd like. I always wrap mine in bacon and bake it. Salt and pepper on top. Garlic and onion inside as well. It's absolutely delicious, cheap, and super simple.

You can also make ratatouille if you like vegetables. Make a tomato/pepper sauce by cooking tomato paste with roasted red peppers and onions until it's thick and saucey. You can also add basil if you'd like. Slice yellow squash, zucchini, eggplant (optional), onions, and tomato (it's important that they're around the same size in diameter and the slices are even, also have the same amount of each). Place the sauce into the bottom of a baking dish in a thin/medium layer and then place the veggies, going in a circle from the edge to the center, and alternating veggies, on top until you have a single layer(be sure to overlap these like you would in a casserole). Salt, olive oil, basil, and balsamic vinegar(optional) on the top (a little of each) and some parmesean if you'd like. Cover and bake until the veggies are tender. It sounds complicated buts it's really not, and it's delicious. You can serve it by itself, with baked chicken, or with fried eggs as a breakfast dish.
