Defrosting is best done in the fridge overnight, but in a rush you can leave it out in the counter

U freeze it in the breastmilk storage bags. When u are ready to use some take a few off put the bags in either a cup or bowl of warm water to thaw. If you look online or ask a lactation specialist they can give you some guidelines on how long both frozen and thawed milk is good for good luck
