So my SO has thick black hair, olive skin & green eyes. I have light brown hair (born with white-blonde hair), and light blue eyes with very pale skin.. Whats the verdict for our baby?

Well green is more recessive then blue so chances are blue eyes and dark hair. Most likely olive skin but really you won't know until you have one.

My husband and his family have tanned complexions, dark brown eyes and dark brown hair. Me and my family are all very pale, blonde hair and blue eyes.

My BIL and SIL just had baby #2. Dad is brown hair and blue eyes, mom is dark brown hair and brown eyes.
Baby #1 has dark brown hair and brown eyes. Baby #2 has RED hair and blue eyes. 
Red hair runs on SIL paternal side. Her brother has red hair and her paternal grandma has red hair. Genetics are crazy.

My mother in law is super dark complected with black hair and eyes, my father in law has brown hair with a pale complexion and blue eyes, out of their 6 kids: 2 are red haired with blue eyes and pale, 1 is blonde with blue and pale, 2 are brown and blue with pale skin, and one is black haired with brown eyes and dark complexion. You just never know lol.

This is the same as my best friend her so is actually half portugease black hair brown eyes olive skin she is fair haired blonde there little 7 month old is blonde with blue eyes whether hair eyes will change I'm not sure

Probably dark hair medium to light skin and eye color could be 50/50 either way. But really it just depends which genes beat out the rest.
