Vegan Mac and cheese?

Can anyone share some good vegan Mac and cheese recipes? I would appreciate it.

I made vegan Mac & Cheese yesterday 😅 I peeled 2 yellow potatoes & chopped them into 1in pieces. Also peeled 1 carrot and chopped them as well. I brought them to a boil with about 1/4th a white onion while the noodles cooked. When the potatoes, carrots, and onions were boiled, I took them (plus about 1.5cups of the water they were boiled in) and a half cup of cashews and blended it. Then I seasoned it with salt, pepper, and garlic powder & poured it over the noodles when they were done.

I make the vegnews Mac and cheese, but add sundried tomatoes and green onions and it's incredible!! And I don't bake it or out bread crumbs on it, it usually gets too dry if baked and I just like the traditional Mac and cheese kinda thing. So I just cook the pasta, cook the veggies separately in a pan, put the veggies in a blender and then mix into the pasta and it's done and incredible!!

i haven't tried it, but everything else that is amy's is extremely good.
