I'm pumping 6oz total every 6 hours or so my baby is a week old just wondering if I'm making a lot of milk or just enough

From one month to six months old, babies drink the same amount of milk in a day, and on average, that amount is about 25 ounces. So roughly an ounce per hour. Sounds like you're right on target for exactly what the average baby will need, with no oversupply. Which is great!
