I made a blueberry and peach pie, and an Apple pie!! I also burned three of my fingers in the process. 
Btw it's all from scratch... even the pie crust. 
Pie crust recipe (9 inch pie pan)
2 cups all purpose flour sifted 
1 teaspoon salt 
2/3 cup butter, margarine, or shortening 
5-7 tablespoons of cold water. 
I let mine sit in the freezer for 15 min before I rolled it out and fit it into the pie crust. 
Also if your pie crust is too sticky add another tablespoon of flour (or more) until it's the right consistency.
Follow the directions of your pie filling. 
(I set the oven to 425 and baked for 45min) 
Peach and blueberry pie 
2 cups frozen or fresh peaches 
2 cups frozen or fresh blueberries 
1/3 cup sugar 
1/4 teaspoon salt 
3 tablespoons of corn starch 
2 tablespoons of cold butter cubed.
Pie crust ( I had to make three batches of pie crust, one for each bottom and one extra for the tops of each pie) 
1/2 teaspoon of cinnamon 
Apple pie
5 large apples, skinned, and cut into pieces or loosely chopped into chunks. 
2 tablespoons cinnamon 
1/3 cup sugar 
2 teaspoons of lemon juice 
Pie crust 
2 tablespoons of corn starch 
You can adjust either of the recipes to your liking. 
Both are baked at 425F for 35-50 minutes. 
Make sure to use an egg and water brush on top so they brown perfectly. 
I let mine freeze for 5 min before putting them into the oven. They ended up being super flaky and delicious. Don't over-roll the dough.
