When I named my daughter, I just did Zoe. If you do the ë, when is that even going to be used? Nobody else is going to write her name that way, it's not going to look that way on her birth certificate, etc., it's just going to be Zoe. Zoey is fine, I guess, but why bother? An e after a vowel already makes the long e sound. Overkill in my opinion, but to each their own.
