My 26day old latches sucks then 2 mins later un-latches gets fussy then latches I'm not sure what to do or why this is happening or if it's even NORMAL

Could be trying to stimulate a letdown. Our supply is lowest late afternoon/early evening. This can be very frustrating for baby so you can see them actively trying to stimulate the letdown.
Or could be letdown is to fast for her and it's choking her. You can unlatch and let the spray go into a towel and than relatch.

When my lo does that it's either start my let down or if he's been latched on for a few minutes unmatched and gets fussy it's because he needs a burp

My son would do this. He would arch his back and pull away like he was in pain. Turns out I had a super fast letdown, he has GERD(reflux), and a dairy sensitivity.
