While pineapples do have an enzyme to break down cells, that might not be the reason for the burn, since those enzymes are digestive enzymes.....
I used to buy pineapples from stores and would be upset because as yummy as they were, I couldn't eat a whole lot because my tongue would burn so bad. When I started working at the farmers markets I would grab some fruits and wondered why the pineapples never sting, I could eat the whole thing. So I asked and from what I've been told by the local farmers here, pineapple is only able to sting when the pineapple is not yet ripe. A real, untreated, properly grown, ripe pineapple will not be highlighter yellow. It's supposed to be really golden/dark yellow tint (most people don't like the color by then and think it's past it's ripe age) However, that's when it's really ripe and by then it shouldn't be acidic enough to burn your tongue. & it's true! I've bought my fruits at farmers markets around my area ever since and have never had pineapple burn me again. 😋🍍
