Any suggestions for easy baby foods/snacks to pack for an 8-hour road trip?

This weekend, our family will be going on our first road trip with our 11-month old son! We are excited but also a little terrified haha Does anyone have ideas for easy foods to pack for the trip? We already have some fruit/veggie pouches, but I was also hoping to pack some fresh (preferably non-messy) foods too. Thank you in advance! :)

Ripe avacados are perfect, you just need a plastic knife to cut it in half and you can use a baby spoon to feed right from the rind (is that what's it called on an avacado lol) my 11 month old eats a whole avacado like this a few times a week

Also - I'm surprised no one mentioned the premade food pouches. If that's your thing. We have some organic cinnamon applesauce and some organic fruit/veggie combos. My girl loves those as a snack on the go! She just sucks it straight out of the pouch. Stays pretty clean too. She loves those as travel treats. :)

Those little cutie mandarin oranges! I cut them in half and then peel and serve. My LO gets so excited over these. Drinkable yogurt is a new favorite. I put it in one of those take and toss cups with a straw.

Last month we did some airplane traveling. My girl seemed to really like her baked sweet potatoes. She prefers the yellow ones over the orangey/yam ones. I peel them and  cut them about 1/4 inch thick, very lightly coat with olive oil and bake at 400 degrees for 20-40 min. Until soft and edges are starting to turn golden. They made great healthy and filling snacks. Even cold!
