Homemade baby purees

I realize this is the natural pregnancy group but I thought y'all might have some answers! My son is 4 months old and our baby food garden is ready for harvesting, but he isn't ready for eating. I was planning on making the purees and preserving them as I do with other foods. But it seems to be the norm to actually freeze the purees instead. Freezing seems like it would cause the food to break down. Should I can and store in the basement, or in the freezer?
