i fucked up my pack of BC pills
i took my sunday(first pill first week) pill when i got my pack like 2 weeks ago cause i'm an idiot
i'm a sunday starter
today's sunday
do i skip today and take Monday's pill on monday  or do i take monday's pill today(sunday)

So I'm not 100% sure on what you're  asking, but from my understanding, you're two weeks in to your pack, and realize that you're a day off. 
My recommendation (if this is accurate) is, since you only have one week until your placebo week, to just stick it out, and expect your period a day late this cycle and start your next pack on a Sunday again.
