Dinner Ideas? 💡

Question

Anyone have some easy dinner ideas? Unfortunately for me, I can't have dairy right now while nursing the little one, so I am running out of ideas that isn't CHEESE!! I'm looking for: cheap (doesn't have to be), easy(or I can learn haha), and dairy free! Alright gooooo.

One of my all time favorites is Coconut Curry Chicken in the crock pot. I use the BoysAhoy recipe if you google it. 
I will often leave out the jalapeño and add raw coconut flakes, diced apples, and raisins for a sweeter curry. 
It's absolutely delicious! Serve it over rice with some garlic naan bread! Yummy! 
It's super easy to make and the whole house smells amazing while it slow cooks for 8 hours! Enjoy!

we eat salad on the regular during the summer months. I just made a big vegetarian one tonight with: lettuce, cucumbers, broccoli, beans...then sauteed rainbow peppers and onions with spices and made a Tex Mex dressing. super fast and easy! 
grilling is also a good option. grill in batches. make a lot of chicken breasts for other meals like salads or sandwiches. 
tacos are quick! pasta bakes.

cooking and food are my hobby....can you tell?? 😂

Roasted veggies ( squash, tomatoes, parsnip, carrots, onions) turkey and leek burger! I can send the recipe for this!
