I just recently made a "lobster roll" sandwich which used hearts of palm, and OMG. I'll have to try to find the recipe to share it

Look at olivesfordinner.com I found the recipe on Pinterest. It says to cook the mixture in an air fryer, but you can just do it in the oven. This was sooooo good. My husband took one bite and immediately was convinced I should be selling it. I was feeling in need of some comfort food that day (I'm breast feeding so I have been craving more hearty dishes) and I toasted my bun like a grilled cheese in a pan, but used Just Mayo instead of earths balance 😳friggin a-may-zang!

^in her cookbook she does this & then makes it the filling for enchiladas but I just love the mix alone or on rice

Hotforfood vegan cauliflower buffalo wings are SO good. I make them like2-3 times a week 🤤😋

Rice + favorite veggies (carrot scallion garlic ginger zucchini bell pepper etc..) avocado oil, red pepper paste or tomato paste, veggie stock or your fave stock, cumin, turmeric, Black pepper and paprika and curry, coconut mylk = YUMMY superfood CURRY 🥕🍆🌶🍠🥙🥘Rice + veggies + sesame or avocado oil + soy sauce + garlic/ginger + dash of water + brown sugar or honey or whatever you like + spicy sauce like sriracha or hot peppers + cornstarch = simple stir-fry. You can add whatever flavours you like if you don’t want plain brown sauce. For example mandarin orange or sweet n sour? 🍛🥕🥒My mum makes a special Mediterranean kind of rice (PROBABLY bulgur!) and she will add tiny cubes of potato and tomato and green pepper, highly suggest!

That's the problem I keep running into! I find recipes that sound amazing, but then I get to the ingredients and directions and I'm like, "I can't make that 😮"

Look up the blog healthyhappylife!! She has some incredible, yummy and super simple recipes and that's the first blog or site I used when first going vegan! My fave is the sweet potato chili!!
