you could always have the cake colored for the babys gender and reveal it at thr cake cutting

We had everyone drop a fizz ball in a extra water glass and dimmed the lights and counted down for our daughter.

I had a friend do her gender reveal using fireworks. You could have everyone go outside during or at the end of your reception to watch you let off gender-specific colored fireworks.
Another option would be for people to let off colored confetti poppers when you leave the wedding before the reception.
